HUMMUS (CHICKPEAS DIP)

Original name: Hummus

Origin: Egypt, Lebanon, Turkey, Syria, Greece

Ingredients
3 glasses boiled chickpeas
3 garlic cloves, crushed
1/3 to 1/2 small spoon salt
2 spoons tahini (pureed sesame)
1/2 glass fresh lemon juice
2/3 glass extra virgin olive oil
¼ small spoon paprika
¼ small spoon cumin powder
½ small spoon salt

Preparation
Add chickpeas to a food processor with ½ glass of warm water and grind for a 3-5 minutes at low speed. Add the salt, spices and garlic, then slowly start to add the tahini sauce as the food processor grinds away. Once done, slowly add the lemon juice and olive oil at the end and let the food processor run for a couple minutes more afterwards. Taste the beautiful puree and see if it needs an adjustment of salt or lemon juice.
