4 big zucchini
1 onion chopped
3-4 fresh green onions chopped
1 spoon of fresh mint (menta) chopped
2 spoons of parsley (prezzemolo) chopped
2 scrambled eggs
200 gr feta cheese
semolina (almost 4 big spoons)

Grate the zucchini, add salt and left them on a towel to remove their water. Add all the rest except for the semolina which will be added slowly in order to have a cream that falls from the spoon. You fry them almost 2 minutes from each side. Not put many of them in the fry in order to achieve a nice external crispy layer. Let them on paper to remove the extra oil. Serve with yogurt.
