MERCIMEK KOFTESI (RED LENTILS BURGERS)

Ingredients
1 glass of red lentils (also green lentils are ok)
1 glass of fine-grained bulgur (cous-cous is an apt substitute)
1 onion, thin chopped
1 tablespoon of concentrated tomato paste
1 spoon of concentrated pepper paste (it can be prepared by mixing chopped red bell peppers. In alternative, use one more spoon of concentrated tomato paste)
0.5 small spoon of ground cumin (or ground coriander)
0.5 small spoon of pimento (or nutmeg)
0.25 small spoon of ground black pepper
1 small spoon of ground chilli pepper (depending on taste)
Juice of half a lemon
salt
pepper
1 bunch of parsely, thin chopped

Preparation
Boil the lentils with 2 ½ glasses of water for about 30 to 40 minutes. When the lentils become completely dissolved, remove from the stove and immediately add the bulgur, mix well, then leave it covered for about 20 minutes. Meanwhile fry the onion until it becomes golden, add the concentrates paste to the onion, cook for another 5 minutes.

When both bulgur and onion cool down, mix both with the spices, lemon juice and salt. Finally, put parsley and serve to make burgers.

The recipe results in about 30 burgers.
