8 red peppers
10-12 fresh green onion leaves, softened in boiled water
1 glass of ricotta cheese
4 spoons of feta cheese crumbled
½ glass of walnuts crushed
½ small spoon black pepper
¼ small spoon peperoncino
½ bunch parsley finely chopped
2-3 spoons extra virgin olive oil
Salt if needed
Roast red peppers on barbecue until they get totally soft. Take them on a plate and cover with stretch film (pellicola) for 5 minutes. Get out and peel them off. Cut them longwise in reasonable dimensions so that they can be rolled.
Mix ricotta, feta cheese, walnuts, black pepper, peperoncino, parsley. Add salt if needed.
Prepare rolls of red pepper with the filling, tie them with green onion leaves. With the help of a spoon, put olive oil on top of the rolls.
